What is Espresso-XOC?
Espresso-XOC is pure cacao: 100% cacao mass from cacao beans, formed into small wafers. It belongs to the same category many people know as raw cacao, but we call it pure cacao because that is exactly what it is.
Cacao mass is not cacao powder. In cacao powder, part of the cacao butter has been pressed out. In Espresso-XOC the whole cacao mass remains, which gives a full cup and a smooth texture.
Nothing added means we add no sugar, fat, flavouring or other ingredients. Nothing removed means no cacao butter is pressed out. The shell is removed as a natural part of the process from cacao bean to cacao mass.
The wafer format makes the cacao easy to measure, easy to prepare and easy to use — no scale, no mess.
How to prepare an Espresso-XOC
The original recipe: 3 wafers, approximately 6 g, and 60 ml hot water.

How does Espresso-XOC taste?
The taste is full and clearly cacao — concentrated, but not sharp. The bitterness is mild and balanced by a light acidity.

Ingredients
Organic cacao mass (Theobroma cacao) from Peru, made from Criollo cacao.
Cacao from Peru
The cacao comes from Peru, where the cacao trees grow in the shade of taller vegetation. The harvest is done by hand, and the beans are selected with care before they move on.
The cacao is organic, and Criollo cacao gives it its character. The finished product is packed in Finland.
From cacao tree to wafer
The path from fruit to wafer is short and deliberately kept simple.

- 5Milling into cacao mass — the beans are milled into a liquid cacao mass.

Espresso-XOC is not alkalised. It does not undergo the alkalisation process – sometimes called Dutch processing – used for some cacao products.
This kind of whole, unaltered cacao is often searched for as raw cacao. We use pure cacao as our own word, and we do not define raw cacao by any temperature limit.

Start with the original recipe: 3 wafers, approximately 6 g, and 60 ml hot water.
For a larger, milder cup, add more liquid. Milk or a plant drink gives a rounder cup, and the cacao works just as well as a base in other drinks and recipes.
