    How to prepare Espresso-XOC in the brewer

    The original recipe: 3 wafers, approximately 6 g, and 60 ml water.

      Choose the programme and temperature according to how you want to prepare your Espresso-XOC.

      Start the brewer and let it heat and mix automatically.

    Preparation takes approximately 60–90 seconds. Serve immediately, preferably in an espresso cup. The original recipe is the starting point. Adjust liquid volume, temperature and programme to your own taste.

    The shell is removed as a natural part of the process from cacao bean to cacao mass. Once the pure cacao mass has been produced, nothing is added and nothing is removed.

    Ingredients

    Organic cacao mass (Theobroma cacao) from Peru, made from Criollo cacao.

    Cacao from Peru

    The cacao comes from Peru, where the cacao trees grow in the shade of taller vegetation. The harvest is done by hand, and the beans are selected with care before they move on.

    The cacao is organic, and Criollo cacao gives it its character. The finished product is packed in Finland.

    From cacao tree to wafer

    The path from fruit to wafer is short and deliberately kept simple.

    1. 1Harvest — the pods are picked by hand.

    3. 3Fermentation — the beans develop their flavour.
    4. 4Drying — the beans are dried.
    5. 5Milling into cacao mass — the beans are milled into a liquid cacao mass.
    6. 6Wafers — the cacao mass is formed into wafers.

    The shell is removed as a natural part of the process from cacao bean to cacao mass.

    Espresso-XOC is not alkalised. It does not undergo the alkalisation process – sometimes called Dutch processing – used for some cacao products.

    This kind of whole, unaltered cacao is often searched for as raw cacao. We use pure cacao as our own word, and we do not define raw cacao by any temperature limit.
